Carrot Cake
Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg (optional)
- 1/2 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped walnuts or pecans (optional)
Directions:
- Preheat the oven to 350F (175C). Grease and flour the cake pans.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add vegetable oil and eggs to the dry mixture. Mix well.
- Fold in grated carrots, crushed pineapple, coconut, and nuts.
- Divide batter into cake pans and bake for 25-30 minutes.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack.
